Ingredients:
• 100 gms – drumsticks, cut into two inch pieces each
• 100 gms – bean
• 100 gms – red Pumpkin
• 100 gms – white pumpkin
• 100 gms – Brinjals
• 100 gms – Potatoes
• 1 tsp – mustard powder
• 3 tsp – grated green Mango paste
• 2 tbsp – Mustard oil
• 1/4 tsp – Haldi powder
• 1 inch piece – ginger, cut into small pieces
• Salt to taste
Method:
- Cut the vegetables into 1 inch pieces and wash well.
- Boil only the drumsticks in hot water for 2 mins and keep aside.
- Drain and keep aside.
- Heat the oil and add the vegetables and the par boiled drumsticks and ginger.
- Cook and stir on slow fire for 2/3 mins adding salt to taste.
- Mix in the haldi powder and mustard powder and the raw green mango paste and continue to cook on low fire.
- Add 2 tbsp of water and cover with a lid.
- Cook till the vegetables are tender but not overcooked.
- Serve with plain rice.
