Ingredients:

• 1 cup – Barley flour
• 1 cup – Grated mixed veggies (carrot, radish, zucchini, Broccoli and cabbage)
• 1 tsp – Ajwain seeds
• Salt
• Oil

Method:

  1. Add enough salt to the vegetables and keep aside for few minutes.
  2. Add the vegetables to the whole wheat flour, barley flour and ajwain seeds.
  3. Gradually add the water left by the vegetables, plain water and salt (if needed).
  4. Knead everything as a soft dough. Keep aside for half an hour.
  5. Make medium-sized balls from the dough.
  6. Dust with enough flour and roll as slightly thick circles.
  7. Drop the flattened paratha over a hot tawa gently.
  8. Drizzle the oil and cook on both sides until they get well cooked.
  9. Enjoy with coconut chutney.
