Ingredients:

• 2 cups – mushroom, cut into pieces
• 2 – Onion chopped, medium sizes
• 1 – Tomato chopped
• 2 – Garlic cloves, crushed
• Ginger – small piece crushed
• 2 – Green chillies
• 1/2 tsp – Turmeric powder
• 1 tsp – chilli powder
• 1/4 tsp -garam masala
• 2 – eggs
• Curry leaves – A few
• 2 tbsp – Coconut oil
• Salt to taste

Method:

  1. Heat oil in a pan. Add 1/2 tsp mustard seeds and let them splutter.
  2. Then add onions and saute till golden.
  3. Fry garlic and ginger for two mins.
  4. Add tomato, green chillies, turmeric powder, chilli powder, salt and curry leaves. Stir well.
  5. Add mushroom, stir and cook by adding a little water.
  6. Cook until no water remains.
  7. Break two eggs.
  8. Add to this mixture, stir well and let it dry.
  9. Add garam masala. Garnish with coriander leaves.
