Ingredients:
• 2 cups – mushroom, cut into pieces
• 2 – Onion chopped, medium sizes
• 1 – Tomato chopped
• 2 – Garlic cloves, crushed
• Ginger – small piece crushed
• 2 – Green chillies
• 1/2 tsp – Turmeric powder
• 1 tsp – chilli powder
• 1/4 tsp -garam masala
• 2 – eggs
• Curry leaves – A few
• 2 tbsp – Coconut oil
• Salt to taste
Method:
- Heat oil in a pan. Add 1/2 tsp mustard seeds and let them splutter.
- Then add onions and saute till golden.
- Fry garlic and ginger for two mins.
- Add tomato, green chillies, turmeric powder, chilli powder, salt and curry leaves. Stir well.
- Add mushroom, stir and cook by adding a little water.
- Cook until no water remains.
- Break two eggs.
- Add to this mixture, stir well and let it dry.
- Add garam masala. Garnish with coriander leaves.
