Ingredients:

• Brinjal – 250 gm
• Tomato – 100 gm
• Tamarind – Lemon size
• Onion – 3
• Green chillies – 3
• Ginger-garlic paste – 1 tsp
• For Roasting:
• Groundnuts – 1 tbsp
• Sesame – 1 tsp
• Poppy Seeds – 1 tbsp
• Coriander seeds – 1 tsp
• Fenugreek seeds – 1/2 tsp
• Garam Masala – 1/2 tsp
• Cumin – 1/2 tsp

Method:

  1. Roast the ingredients for the masala separately and mix together.
  2. Grind to a fine paste with a lemon size tamarind ball.
  3. Put oil in a kadai and fry finely chopped onion.
  4. Add ginger garlic paste and stir.
  5. Add the ground masalas and fry.
  6. Add the finely chopped tomatoes, slit green chillies and fry.
  7. Add salt accordingly.
  8. Slit the brinjal and fry in a little oil in a separate kadai and keep it aside.
  9. Steam the brinjals with a little salt in the microwave.
  10. Add the brinjals in the gravy and stir.
  11. Cover and cook till the oil separates.
  12. Serve.
