Ingredients:

• 5 cups – Bread crumbs
• 1/2 cup – Butter, melted and cooled
• 2 tbsp – Butter
• 1 tsp – Cinnamon powder
• 1/2 tbsp – Cornflour Corn starch
• 4 – Eggs, beaten
• 1 tbsp – Lemon essence, Lemon zest
• 3 tbsp – Lime Juice
• 4 cups – Milk scalded
• 1 tbsp – Nutmeg powder
• 1 cup – Raisins
• Salt to taste
• 1/2 cup – Sugar
• 1 cup – Hot water.

Method:

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. In the meanwhile spray an 8×11 inch casserole with a nonstick spray.
  3. Then combine the bread cubes, 1 cup sugar, salt, cinnamon, nutmeg and the raisins in a large bowl.
  4. In another bowl, blend the milk, melted butter, and eggs.
  5. Now mix the all the ingredients together and pour the mixture into the casserole dish.
  6. Then pour hot water into a baking pan and place the casserole dish in it about 1/3 up the side of the casserole dish. Bake for 45 minutes.
  7. Now in a small saucepan, combine 1/2 cup sugar, cornstarch, 1 cup hot water, 2 tbsps butter, lemon juice, and lemon zest.
  8. Cook on medium heat until it thickens.
  9. Stir continously to avoid scorching.
  10. Serve with the bread pudding.
