Ingredients:

• 2 cups – Basmati Rice
• 4 cups – Coconut Milk
• 1 tbsp – Urad Dal
• 3 tbsp – split yellow moong dal
• 6 – dry Red Chillies
• A few sprigs – Curry leaves
• 3 tbsp – salted Peanuts (crushed lightly)
• Oil as required
• Salt to taste
• 1/4 cup – grated Coconut

Method:

  1. Wash and soak the rice for 15 minutes, drain and keep aside.
  2. Heat oil in a pressure cooker, add urad dal and moong dal, and fry until they turn golden brown.
  3. Add red chillies, curry leaves, crushed peanuts and fry again for a few minutes.
  4. Add rice and saute for 2 minutes. Add coconut milk, salt and pressure cook up to 2 whistles.
  5. Allow the steam to escape and separate the grain of rice lightly, with a fork.
  6. Garnish with grated coconut.
