
Ingredients:
• 1 cup – raw Rice
• 3/4 cup – Jaggery
• 1 generous pinch – Cardamom powder
• 1 – small sized Banana
• 1 tbsp – Coconut grated (optional)
• ghee/oil
Method:
- Soak rice in water for at least 3 hours. Drain water and grind rice with a little water to a fine paste.
- Soak jaggery in water. Filter to remove impurities.
- Add this to the ground paste and run the mixie to mix it evenly.
- Now transfer this to a serving bowl, add banana, cardamom powder, coconut and mix well.
- If it is too watery, add a tsp of wheat flour.
- The consistency should be like the dosa batter.
- Set aside for another 2 hours.
- Then heat paniyaram pan with a little ghee in each hole.
- Pour a spoon full of the batter in each hole.
- When cooked on one side, carefully flip to the other side – add oil/ghee if required.
- Cook until both sides are golden brown.
