Ingredients:

• 1 cup – raw Rice
• 3/4 cup – Jaggery
• 1 generous pinch – Cardamom powder
• 1 – small sized Banana
• 1 tbsp – Coconut grated (optional)
• ghee/oil

Method:

  1. Soak rice in water for at least 3 hours. Drain water and grind rice with a little water to a fine paste.
  2. Soak jaggery in water. Filter to remove impurities.
  3. Add this to the ground paste and run the mixie to mix it evenly.
  4. Now transfer this to a serving bowl, add banana, cardamom powder, coconut and mix well.
  5. If it is too watery, add a tsp of wheat flour.
  6. The consistency should be like the dosa batter.
  7. Set aside for another 2 hours.
  8. Then heat paniyaram pan with a little ghee in each hole.
  9. Pour a spoon full of the batter in each hole.
  10. When cooked on one side, carefully flip to the other side – add oil/ghee if required.
  11. Cook until both sides are golden brown.
