Ingredients:
• Rice – 1 cup
• moong dal – 1/2 cup
• beans – 2 cups
• Cauliflower – 2 cups
• peas – 2 cups
• Potatoes – 2 cups
• Capsicum – 2 cups
• Jeera – 1 tsp
• Coconut Milk powder – 2 tbsp
• For Grinding:
• coriander leaves, chopped- 2tbsp
• pudina leaves, chopped- 2 tbsp
• green chillies- 2
• ginger- 1 /2
• salt to taste
• oil – 2 tbsp
Method:
- Wash and soak rice and dal for 10 mins. Heat oil in a cooker. Add jeera. When it splutters, add cubed vegetables, ground paste of chillies, ginger, coriander and pudina.
- Fry well, add drained dal and rice, salt to taste, coconut milk powder mixed in little warm water and mix.
- Add 2 cups of water (preferably hot), stir and cover the lid. Cook for 1 whistle.
- Garnish with coriander leaves and serve hot with onion or cucumber raitha.
