
Ingredients:
• 120g – margarine
• 2 – eggs
• 120g – Sugar
• 1 tbsp – Milk
• 175g – Refined flour
• 1 level tsp – baking powder
• 50g – mixed fruit (currants, sultanas, raisins)
• 15g – almonds, chopped
• 15g – walnuts, chopped
Method:
- Cream margarine and sugar till light and fluffy.
- Beat the eggs and gradually add to the mixture.
- Sift flour with baking powder and add to the mix.
- Blend the batter well and mix the fruits, chopped almonds, and walnuts.
- Stir in the milk so that the mixture becomes even and smooth.
- Grease a round cake tin.
- Pour in the cake mixture.
- Cover with a grease-proof paper.
- Bake in a preheated oven at 350 degree F for 20 minutes.
- When the top is golden in colour, take it out of the oven.
- If desired, spread some hot chocolate icing over it.
- Decorate with cherries.
