Ingredients:

• 120g – margarine
• 2 – eggs
• 120g – Sugar
• 1 tbsp – Milk
• 175g – Refined flour
• 1 level tsp – baking powder
• 50g – mixed fruit (currants, sultanas, raisins)
• 15g – almonds, chopped
• 15g – walnuts, chopped

Method:

  1. Cream margarine and sugar till light and fluffy.
  2. Beat the eggs and gradually add to the mixture.
  3. Sift flour with baking powder and add to the mix.
  4. Blend the batter well and mix the fruits, chopped almonds, and walnuts.
  5. Stir in the milk so that the mixture becomes even and smooth.
  6. Grease a round cake tin.
  7. Pour in the cake mixture.
  8. Cover with a grease-proof paper.
  9. Bake in a preheated oven at 350 degree F for 20 minutes.
  10. When the top is golden in colour, take it out of the oven.
  11. If desired, spread some hot chocolate icing over it.
  12. Decorate with cherries.
