Ingredients:
• 1/2 kg – Okra (chopped)
• 1- Onion (chopped finely)
• 2 – Green chillies (slit opened)
• 1/2 tsp – Mustard Seeds and Urad Dal
• 5 – Curry leaves
• Oil
• Salt
• For Oats and Quinoa Spice Powder:
• 1/4 cup – rolled oats
• 1/4 cup – Quinoa
• 3 – Dry Red Chillies
• 1 tbsp – Urad Dal
• 2 tbsp – Channa dal
• 2 tbsp – Coriander seeds
• 1/4 tsp – Asafoetida powder
• 2 pinch – Turmeric powder
• Salt
Method:
- Heat oil and sputter mustard seeds and urad dal.
- Add chopped onions, curry leaves and slit opened green chillies with salt and saute until the onions turns translucent.
- Add the chopped okra pieces and saute for few minutes.
- Put the flame on medium and cook for a few minutes on simmer with the lid closed.
- Finally add 3-4 tbsps of oats-quinoa spice powder to the cooking okra pieces and saute until the vegetables turn crispy.
- For spice powder:
- Dry roast the channa dal, urad dal and dry red chillies until they turn golden brown.
- Now add the coriander seeds and dry roast for a few minutes.
- Finally roast the quinoa and rolled oats for a few minutes along with asafoetida powder and turmeric powder.
- Add salt to the roasted ingredients and grind as a coarse powder.
