Ingredients:

• 1/2 kg – Okra (chopped)
• 1- Onion (chopped finely)
• 2 – Green chillies (slit opened)
• 1/2 tsp – Mustard Seeds and Urad Dal
• 5 – Curry leaves
• Oil
• Salt
• For Oats and Quinoa Spice Powder:
• 1/4 cup – rolled oats
• 1/4 cup – Quinoa
• 3 – Dry Red Chillies
• 1 tbsp – Urad Dal
• 2 tbsp – Channa dal
• 2 tbsp – Coriander seeds
• 1/4 tsp – Asafoetida powder
• 2 pinch – Turmeric powder
• Salt

Method:

  1. Heat oil and sputter mustard seeds and urad dal.
  2. Add chopped onions, curry leaves and slit opened green chillies with salt and saute until the onions turns translucent.
  3. Add the chopped okra pieces and saute for few minutes.
  4. Put the flame on medium and cook for a few minutes on simmer with the lid closed.
  5. Finally add 3-4 tbsps of oats-quinoa spice powder to the cooking okra pieces and saute until the vegetables turn crispy.
  6. For spice powder:
  7. Dry roast the channa dal, urad dal and dry red chillies until they turn golden brown.
  8. Now add the coriander seeds and dry roast for a few minutes.
  9. Finally roast the quinoa and rolled oats for a few minutes along with asafoetida powder and turmeric powder.
  10. Add salt to the roasted ingredients and grind as a coarse powder.
