
Ingredients:
• Okra – 500 gm
• Mustard Seeds – 1 tsp
• dry Red Chillies 3 to 4, broken into pieces
• Tamarind 3 cm round ball
• Curry leaves few
• Onion – ?cup, finely sliced
• Jaggery powder – 1 tsp
• coriander powder – 1 tsp
• cumin powder – 1 tsp
• oil – 4 tbsp
• salt to taste
Method:
- Soak tamarind in ?cup of water for 15-20 mins and extract the pulp.
- Wash the okra and wipe dry. Cut into 3 cm pieces.
- Heat oil in a kadai. Add mustard seeds.
- When they splutter, add red chillies.
- After few seconds, add curry leaves and onion.
- Fry till onion is light brown.
- Add okra and salt. Fry till okra is brown.
- Add jaggery, coriander and cumin powders and tamarind extract.
- Simmer till the okra is cooked and then masala coats the pieces.
