Ingredients:
• 250 g – all purpose flour
• 290 g – granulated Sugar
• 170 g – dark Brown sugar
• 110 g – cocoa powder
• 2 1.5 tsp – baking soda
• 1 1.5 tsp – salt
• 550 g – buttermilk
• 230 g – Butter (room temperature)
• 2 eggs
• 1 1.5 tsp – vanilla
• 1 ground Orange zest
• 2 tsp – ground Cinnamon
• 1.5 tsp – ground Clove
• 1 tbsp – ground Ginger
• 170 g – melted chocolate
Method:
- Pre-heat oven at 180 degree C.
- Butter the parchment, line a rectangle-shaped baking tray (20cm x 10cm).
- Whisk buttermilk and eggs together.
- Place all other ingredients (except the chocolate) in an electric mixer bowl.
- Blend for 45 seconds on low speed.
- Add melted chocolate and mix for 3 mins.
- Place in the baking tray and cook for 40 mins until a knife inserted into centre comes out clean.
