Ingredients:

• 200 gms – padavilanga (1 medium size piece)
• 1/2 tsp – salt
• 1/2 (100 ml) – water
• For seasoning:
• 1 tbsp – oil
• 1 tsp -mustard seeds
• 1/2 tsp – Jeera (cumin seeds)
• 1/2 tsp – Urad Dal
• 1 – green chilli, slit lengthwise
• 1 – Dried red chilli , broken
• 6 Cloves – garlic, chopped
• 6 – shallots, chopped

Method:

  1. Wash and clean padavilanga.
  2. Gently remove the outer layer.
  3. Use chopstick or big needle to remove seeds from inside.
  4. Cut into circles (1-8 – inch ).
  5. In a bowl, boil padavilanga – poddele pieces with 1/2 cup water and salt for 10 minutes or until tender and drain out water. Keep aside.
  6. Final preparation:
  7. In a pan, heat oil.
  8. Add mustard seeds.
  9. When they crackle, add jeera and urad dal. Saute for 1 minute.
  10. Add slit green chilli and red chilli.
  11. Stir well for 2 minutes.
  12. Add chopped garlic and shallots.
  13. Stir fry on a low to medium heat until crisp and golden colour.
  14. Add separately boiled padavilanga rings and adjust salt to taste.
  15. Gently stir well for 5 minutes or until all the seasoning ingredients are well mixed with padavilanga – poddale rings.
  16. Serve as a side dish with Rice.
