Ingredients:

• 2 cups – all purpose flour (maida)
• 4 tbsp – Butter
• 1/2 tsp – salt
• 1/2 cup – Ghee
• 2 to 3 tbsp – Rice flour
• 1/2 tsp – powdered Sugar and Cardamom powder to sprinkle on top
• to deep fry – oil or Ghee

Method:

  1. Mix maida, butter and salt together.
  2. Add enough water and make dough as for puree.
  3. Keep covered for 1/2 hour.
  4. Divide the dough into 12 parts and shape into balls.
  5. Roll out each ball into a thin round.
  6. Spread one side of each round with ghee and sprinkle lightly with rice flour.
  7. Stack 6 rounds together, ghee side up to make 2 stacks.
  8. Roll the stacks into a cylinders and cut into 2 cm thick slices.
  9. Roll out each slice into a puri, doubly thick than a normal puri.
  10. Deep fry in moderately hot oil or ghee, over a slow flame till crisp.
  11. Drain well, cool slightly and sprinkle both sides with powdered sugar mixed with cardamom powder.
  12. Cool completely and store in an air tight container.
