Ingredients:
• Brown Rice – 1cup
• Palak juice – 1 cup
• Coconut Milk – 1 cup
• Sweet Corn – 1/2 cup
• Olive oil- 1 tsp
• Clove- 2
• Bay leaf- 1
• Saunf – 10 seeds
• Jeera – 15 seeds
• Green chilies- 2
• Ginger-garlic paste – 1 tsp
• Salt to taste
Method:
- Wash and soak brown rice for 120 minutes.
- In the pressure cooker, heat oil and roast saunf, jeera, cloves, bay leaf with ginger-garlic paste and chillies.
- Add the brown rice and salt and fry for 1 min.
- Add palak juice and coconut milk and pressure cook for 3-4 whistles.
- Boil the corn and keep aside.
- Mix the rice with the boiled corn and stir gently.
- Serve hot with raitha.
