Ingredients:
• 1 bunch fresh spinach, chopped
• 1 tomato, finely chopped
• 1/2 tsp Red Chilli powder
• 1/2 tsp Turmeric powder
• 1/2 tsp dried Mango (amchoor) powder
• 1/2 tsp Wheat flour
• 2 pinches Asafoetida powder
• 1/2 tsp each mustard and Cumin seeds
• Salt to taste
• 1 tbsp oil
Method:
- Wash and drain spinach in a colander.
- Heat oil in pan, add seeds and allow to splutter.
- Add asafoetida and tomatoes and stir.
- Add all spice powders, stir and cook for a minute.
- Add spinach, cover and allow to soften.
- Stir, add flour and simmer further for 2-3 mins.
- Take off fire and serve hot with roti, puri or rice.
