Ingredients:
• 1 cup (200 g) – moong dal
• 1 – Green chilli
• 1 – 1/2 inch piece of ginger, chopped
• 12 – Garlic cloves, chopped
• 2 tsp – coriander leaves, chopped
• 1 – small bunch of Methi leaves, washed and finely chopped
• 1/2 tsp – cooking soda
• salt to taste
• 2 tsp – oil to grease the katoris/pandori cups
Method:
- Grease the katoris or pandori cups with a little oil and keep ready.
- Wash and soak the moong dal in 2 cups of water for 4 hours, then drain the water.
- Add green chilli, ginger and garlic and prepare a smooth batter in a mixer (do not use water).
- Add chopped coriander leaves, methi leaves, cooking soda and salt. Mix all the ingredients well.
- Pour the pandori batter in each cup (three-fourth level) and steam in a steamer or pressure cooker (without weight) for 5-7 minutes or until soft.
- To check if the pandoris are ready, pierce them with a toothpick. The batter should not stick to it. Unmould and serve hot with a chutney of your choice.
