Ingredients:

• 250 g – Paneer
• 15 – Almonds
• 5-8 – Cashew nuts
• 3-4 – dry Apricot
• 1 tbsp – sesame seeds (white), dry roasted
• 250 ml – Milk
• 50 gm – fresh light Cream
• Green chillies, to taste
• 1 cup – green vegetables (French beans, green peas, capsicum, etc.)
• Salt – to taste
• 1/2 tbsp – Olive oil (extra-virgin)/any cooking oil

Method:

  1. Soak almonds, cashew, apricot, and sesame seeds in enough hot milk for 25-30 minutes.
  2. In the meantime, cut the vegetables in small cubes and keep aside.
  3. Cut the paneer in cubes and marinate with salt.
  4. Now make a smooth paste with the soaked nuts and seeds.
  5. In a pan/kadai, put 1/2 tbsp of oil, add slit green chillies and fry.
  6. Add the vegetables and saute lightly. Do not let them brown.
  7. Now add the white (nut) paste and mix well.
  8. Add some water and let it simmer till the vegetables are cooked.
  9. Be careful that the milk does not burn or the gravy dry up.
  10. Add the paneer and the cream. Add more milk to get the consistency you prefer.
  11. Add salt.
  12. Serve hot with ajwain/lachhaa/plain paranthas.
