Ingredients:
• 300g – Cottage cheese (paneer cubes)
• 1 Clove of Garlic (crushed)
• 1/2 tsp – Ginger paste
• 1 red pepper (chopped)
• 1 green pepper (chopped)
• 2 tbsp – oil
• Salt to taste
• 1 cup – cooked Rice
• For chilli sauce:
• 1/2 tsp – Red Chillies (ground)
• 2 Cloves of Garlic (crushed)
• 1 tbsp – fresh Coriander leaves (chopped)
• 1 tbsp – Lemon juice
• 1 tbsp – Sugar
• 1 tsp – oil
• 2 tsp – Corn flour
• 3/4 cup – water
• 1 tsp – Green chillies (chopped)
• Salt to taste
Method:
- Combine the paneer, garlic, ginger and salt and marinate for 15-20 minutes.
- Thread the paneer and the red and green peppers alternately on skewers.
- Brush with oil and grill till golden on all sides.
- Serve on a bed of rice with the sauce.
- For Chilli Sauce:
- Grind together coriander leaves, red chillies, green chillies, and garlic along with the lemon juice and sugar.
- Heat oil in a pan, add the chilli mixture and cook for a few seconds.
- Blend the corn flour in the water and stir into the chilli mixture.
- Add salt and cook till the sauce starts boiling and becomes thick.
- Remove from fire and serve with the paneer kebabs and rice.
