Ingredients:

• 200 gm – Paneer or Tofu (use Paneer made from skimmed milk)
• 150 gm – Capsicums
• 150 gm – Onions
• 100 gm – Carrots
• 150 gm – Tomatoes
• 1 tbsp – oil
• 2 – green chillies, chopped fine
• 1 tsp – ginger, minced
• 3 tbsp – Mint leaves, minced
• 3 tbsp – coriander leaves, minced
• 2 – Red Chillies
• 2 tsp – Coriander seeds
• 1 tsp – Cumin seeds
• 1/2 tsp – pepper
• 1/2 tsp – salt

Method:

  1. Slice the paneer or tofu.
  2. Cut capsicums into 3 cm pieces.
  3. Cut onions into 6 parts and separate layers.
  4. Slice carrots. Chop tomatoes.
  5. Steam all the vegetables except tomatoes till tender crisp.
  6. Powder red chillies with coriander, cumin and pepper.
  7. Heat oil, fry minced ingredients.
  8. Add powdered masala, fry 1 minute.
  9. Add tomatoes, paneer and vegetables. Add salt.
  10. Sprinkle 2 tbsp of water and simmer for 5 minutes.
  11. Serve with rotis.
