Ingredients:
• 200 gm – Paneer or Tofu (use Paneer made from skimmed milk)
• 150 gm – Capsicums
• 150 gm – Onions
• 100 gm – Carrots
• 150 gm – Tomatoes
• 1 tbsp – oil
• 2 – green chillies, chopped fine
• 1 tsp – ginger, minced
• 3 tbsp – Mint leaves, minced
• 3 tbsp – coriander leaves, minced
• 2 – Red Chillies
• 2 tsp – Coriander seeds
• 1 tsp – Cumin seeds
• 1/2 tsp – pepper
• 1/2 tsp – salt
Method:
- Slice the paneer or tofu.
- Cut capsicums into 3 cm pieces.
- Cut onions into 6 parts and separate layers.
- Slice carrots. Chop tomatoes.
- Steam all the vegetables except tomatoes till tender crisp.
- Powder red chillies with coriander, cumin and pepper.
- Heat oil, fry minced ingredients.
- Add powdered masala, fry 1 minute.
- Add tomatoes, paneer and vegetables. Add salt.
- Sprinkle 2 tbsp of water and simmer for 5 minutes.
- Serve with rotis.
