Ingredients:

• short macaroni – 100 gm
• boiled vegetables – 2 cups
• Onions – 1 cup, chopped
• Tomatoes – 1 cup, chopped
• Green chillies 3, minced
• Ginger 2 cm, minced
• Celery 2 stalks, chopped
• refined oil – 3 tbsp
• chilli powder – 1/2 tsp, optional
• Tomato ketchup -1/2 cup
• salt to taste
• For Sauce :
• Milk – 300 ml
• Butter – 2 tbsp Maida – 2 tbsp
• cheddar cheese – 100 gm, grated
• Egg 1, lightly beaten
• Butter – 1 tbsp, for topping
• salt and pepper to taste

Method:

  1. Cook macaroni as per the directions on the pack.
  2. Heat oil, fry onion till light brown.
  3. Add green chillies, ginger and celery and fry for 1 minute.
  4. Add tomatoes, chilli powder, ketchup, vegetables, macaroni and salt.
  5. Mix well (add a little water or stock if necessary) and remove from fire.
  6. Pour in a greased baking dish.
  7. Melt butter for sauce, add Maida and fry till the raw smell is lost.
  8. Add milk, and cook and stir till it just begins to boil.
  9. Remove from fire, add one and a half the beaten egg and one and a half the grated cheese, salt and pepper.
  10. Pour over the macaroni vegetable mixture.
  11. Sprinkle remaining cheese on top.
  12. Pour remaining egg over it.
  13. Dot with 1 tbsp of butter and bake in a hot oven (200 degrees centigrade ) till brown on top. Serve hot.
