Ingredients:
• 100 gms – uncooked pasta.
• 1 tbsp – oil.
• 2 to 3 tbsp – basic dressing.
• 1 – medium sized onion.
• 12 – black olives| To garnish:
• 1 tbsp – chopped Parsley or other fresh herbs.
Method:
- Cook the pasta in plenty of fast boiling salted water with a tbsp of oil. It will take about 10 mins, more or less, but do not over cook.
- As soon as it just done, pour into a colander and rinse with cold water to stop further cooking.
- Drain and mix with the salad dressing straight away.
- Peel and finely chop the onion, stone the olives.
- Stir all these into the pasta and sprinkle the chopped parsley over the top.
- You could also use many other ingredients such as chopped peppers or tinned fish to spice up your salad.
