
Ingredients:
• 2 cups – flour.
• A pinch – salt.
• 1 cup – brown sugar.
• 1/2 cup – butter.
• 4 tbsp – milk.
• 1/2 tsp – vanilla essence.
• 1 – lemon.
• 2 – eggs, separated.
• 1/2 cup – chopped peanuts.
• 4 tbsp – castor sugar.
Method:
- Cream the butter, gradually beat in the sugar. Beat in the egg yolks, milk and vanilla essence.
- Stir in the dry ingredients. Spread evenly into an ungreased pan.
- Beat the egg whites till they form soft peaks.
- Spread over the mixture. Combine and sprinkle the peanuts and sugar.
- Bake in a moderate oven of 350 C for 40 mins.
- Cut into bars while warm.
