Ingredients:

• 2 cups – peanuts, shelled.
• 1 – large Onion finely chopped.
• 1 – large Tomato finely chopped.
• 1 tbsp – Coriander leaves finely chopped.
• 1 – small sprig Mint leaves, finely chopped.
• 1 – Green chilli finely chopped or 1/4 tsp – red chilli, crushed fine.
• 1 tsp – Cumin seeds coarsely crushed.
• 1/2tsp – sugar.
• 1 tbsp – white vinegar.
• salt to taste.

Method:

  1. Wash peanuts, add water, pressure cook it for 2-3 whistles.
  2. Nuts should be cooked properly but they should remain firm and not mushy.
  3. Drain, wash it with running water.
  4. Allow all water to drain in colander for 10 mins.
  5. Take in a large salad bowl, add all the other ingredients.
  6. Toss them well till all the flavours blend, refrigerate it till gets chilled.
  7. Serve chilled as a filling salad.
