Ingredients:

• 100 g – vegetable noodles, boiled
• 1 tbsp – oil
• 8 Cloves – garlic, finely chopped
• 1/2 inch piece of ginger, finely chopped
• 1 – green chilli, chopped
• 1 cup – mixed vegetables (1 carrot, 1/2 Capsicum and 1/4 thinly shredded cabbage)
• 1/4 cup – boiled and shredded Chicken
• 2 tsp – Vinegar
• 1/2-3/4 tsp – pepper powder
• salt to taste

Method:

  1. Heat oil in a wok/wide pan on medium heat. Add the chopped garlic and fry until light golden in colour.
  2. Add the chopped ginger and green chilli. Fry on low heat until fragrant and crisp.
  3. Add the mixed vegetables and fry for 8-10 minutes until tender.
  4. Add the chicken, vinegar, pepper and salt to taste. Stir well.
  5. Add the boiled noodles.
  6. Mix the ingredients well for 5-7 minutes until the noodles are well combined with the vegetables and pepper powder.
  7. Serve hot with any Chinese gravy dish.
