
Ingredients:
• 100 g – vegetable noodles, boiled
• 1 tbsp – oil
• 8 Cloves – garlic, finely chopped
• 1/2 inch piece of ginger, finely chopped
• 1 – green chilli, chopped
• 1 cup – mixed vegetables (1 carrot, 1/2 Capsicum and 1/4 thinly shredded cabbage)
• 1/4 cup – boiled and shredded Chicken
• 2 tsp – Vinegar
• 1/2-3/4 tsp – pepper powder
• salt to taste
Method:
- Heat oil in a wok/wide pan on medium heat. Add the chopped garlic and fry until light golden in colour.
- Add the chopped ginger and green chilli. Fry on low heat until fragrant and crisp.
- Add the mixed vegetables and fry for 8-10 minutes until tender.
- Add the chicken, vinegar, pepper and salt to taste. Stir well.
- Add the boiled noodles.
- Mix the ingredients well for 5-7 minutes until the noodles are well combined with the vegetables and pepper powder.
- Serve hot with any Chinese gravy dish.
