Ingredients:
• 1 cup – Carrots
• 1 cup – Cabbage
• 1 cup – beans (all finely chopped)
• 1 cup – Corn and Peas
• 1/2 cup – moong dal
• 1 tsp – Urad Dal
• Mustard
• 3-4 – Green chillies
• 1/2 cup – grated Coconut
• 1-2 tbsp – oil
• A pinch of Turmeric powder
• Salt, to taste
• A sprig of Cilantro leaves
Method:
- Take oil in a thick bottomed pan and add mustard and urad dal.
- When the mustard splutters add the cut vegetables, moong dal, peas and corn. Add salt to taste.
- Add two cups of water – enough to cover the vegetables. Mix well and cover with plate.
- When the vegetables are well-cooked, set aside.
- Now blend cilantro leaves, green chillies and grated coconut and add to the vegetables.
- Mix well and serve.
