Ingredients:

• 1/2 cup – Pineapple pieces
• 1 – tender Coconut
• 1/2 tsp – ginger, chopped
• Sprig of Mint to garnish
• Sugar to taste

Method:

  1. Drain the tender coconut water and scoop out the pulp.
  2. Blend pineapple pieces, ginger and coconut pulp together.
  3. Add 1/2 cup of coconut water and sugar if desired and blend till smooth.
  4. Add remaining coconut water and blend till mixed.
  5. Chill in refrigerator.
  6. Serve garnished with a sprig of mint.
