Ingredients:
• 1/2 cup – Pineapple pieces
• 1 – tender Coconut
• 1/2 tsp – ginger, chopped
• Sprig of Mint to garnish
• Sugar to taste
Method:
- Drain the tender coconut water and scoop out the pulp.
- Blend pineapple pieces, ginger and coconut pulp together.
- Add 1/2 cup of coconut water and sugar if desired and blend till smooth.
- Add remaining coconut water and blend till mixed.
- Chill in refrigerator.
- Serve garnished with a sprig of mint.
