Ingredients:

• Pineapple – 1 large
• dried Apricots – 100 gm
• Jaggery or soft Brown sugar – 1/3 cup
• Cinnamon powder – 1/2 tsp
• dry Ginger powder – 1/2 tsp
• Bananas – 2 cups, sliced
• Lime juice – 1 tbsp
• Mint leaves to garnish

Method:

  1. Peel, core and cut pineapple into pieces.
  2. Soak apricots in 1 cup of water for 1 hr.
  3. Remove the seeds, return the apricots to the water in which they were soaked.
  4. Simmer on a low flame till soft.
  5. Dissolve brown sugar or jaggery in 1/2 cup of water and add to the apricots.
  6. Simmer for 10 minutes. Cool and blend in a mixer. Add cinnamon and ginger powder.
  7. Mix the apricot sauce with pineapple pieces. Refrigerate at least for 6 hrs, overnight if possible.
  8. About 1-2 hrs before serving, slice the bananas, toss in lime juice and add to the pineapple mixture.
  9. Serve chilled, decorate with mint leaves.
