Ingredients:
• Pineapple – 1 large
• dried Apricots – 100 gm
• Jaggery or soft Brown sugar – 1/3 cup
• Cinnamon powder – 1/2 tsp
• dry Ginger powder – 1/2 tsp
• Bananas – 2 cups, sliced
• Lime juice – 1 tbsp
• Mint leaves to garnish
Method:
- Peel, core and cut pineapple into pieces.
- Soak apricots in 1 cup of water for 1 hr.
- Remove the seeds, return the apricots to the water in which they were soaked.
- Simmer on a low flame till soft.
- Dissolve brown sugar or jaggery in 1/2 cup of water and add to the apricots.
- Simmer for 10 minutes. Cool and blend in a mixer. Add cinnamon and ginger powder.
- Mix the apricot sauce with pineapple pieces. Refrigerate at least for 6 hrs, overnight if possible.
- About 1-2 hrs before serving, slice the bananas, toss in lime juice and add to the pineapple mixture.
- Serve chilled, decorate with mint leaves.
