
Ingredients:
• 1/4 of a medium size – pineapple, cut into 1/2 inch cubes
• 50 ml – water
• 1 – medium size – ripe banana, cut into 1/2 inch cubes
• 50 ml – water
• 4 tbsp – thick Curd
• 2 tsp – Sugar
• For Coconut paste:
• 50 g – grated Coconut
• 1/2 tsp – Cumin seeds
• 2 tbsp – water
• For seasoning:
• 2 tsp – oil
• 1 tsp – Mustard Seeds
• 1/2 tsp – Cumin seeds
• 2 – Dried red chillies
• 4 strands – Curry leaves
Method:
- Separately boil pineapple and banana cubes in 1/4 cup water on a low heat until tender.
- In a bowl, mash the boiled ripe bananas and pineapple separately, and then add them together.
- Add 4 tbsps thick curd and stir continuously for 2 minutes until well blended.
- Add coconut paste and sugar and mix gently.
- For seasoning:
- Heat oil and splutter add mustard seeds, then add cumin seeds, broken dried red chillies and curry leaves.
- Stir well on a low heat for 2 – 3 minutes and pour the seasoning over pineapple-banana coconut mix.
