Ingredients:

• Pineapple – 1 (or tinned Pineapple slices).
• Brown sugar – 2 to 3 tbsp.
• Cinnamon powder – 1/2 tsp.
• Rum or brandy – 1 tbsp| Mango Cream.
• Fresh Curd – 4 cups.
• Fresh or tinned Mango pulp – 2 cups.
• Fresh Cream – 1 cup.
• Sugar to taste.
• Orange liqueur – 2 tbsp.
• Pistachio nuts to garnish.

Method:

  1. Peel and cut pineapple into slices.
  2. Toss with cinnamon powder and refrigerate at least for one hour.
  3. Line a deep strainer with a thin cloth. Place curd in it and let all the liquid drain till about 1 cup of thick curd cheese is left the cloth.
  4. Beat the curd cheese till smooth and mix with mango pulp.
  5. Add whipped cream, brown sugar, rum or brandy and orange liqueur.
  6. Just before serving, place pineapple slices in individual pudding bowls and top with mango cream and garnish with chopped pistachio nuts.
