Ingredients:
• Carrots – 4 (grated)
• Moong dal – 1/4 cup, soaked in water for 1/2 hour
• Coconut (grated) – 2 tbsp
• Mustard Seeds – 1 tsp
• Urad Dal – 1 tsp
• Hing Asafoetida – 1 tsp
• Green chillies – 2 (slit)
• Curry leaves and Coriander leaves for garnishing
• Juice of one Lemon
• Salt to taste
• Oil-1 tsp
Method:
- In a salad bowl, mix the grated carrots, soaked moong dal (after straining excess water), coconut, curry leaves, coriander leaves, salt and lime juice.
- Fry the seasonings (mustard, urad dal, green chillies, asafetida) in oil till they splutter and add this to the salad.
- Mix well and serve.
