Ingredients:

• Carrots – 4 (grated)
• Moong dal – 1/4 cup, soaked in water for 1/2 hour
• Coconut (grated) – 2 tbsp
• Mustard Seeds – 1 tsp
• Urad Dal – 1 tsp
• Hing Asafoetida – 1 tsp
• Green chillies – 2 (slit)
• Curry leaves and Coriander leaves for garnishing
• Juice of one Lemon
• Salt to taste
• Oil-1 tsp

Method:

  1. In a salad bowl, mix the grated carrots, soaked moong dal (after straining excess water), coconut, curry leaves, coriander leaves, salt and lime juice.
  2. Fry the seasonings (mustard, urad dal, green chillies, asafetida) in oil till they splutter and add this to the salad.
  3. Mix well and serve.
