Ingredients:

• 1 lb – Pumpkin (yellow)
• 2 – Onions
• 2 – Tomatoes
• 2 – Green chillies
• 1 tsp – Sugar
• 1 tsp – Red Chilli powder
• 1/4 cup – grated Coconut
• Salt to taste
• Chopped Cilantro

Method:

  1. Chop onions, green chillies and tomatoes finely.
  2. Cut the pumpkin into medium size pieces.
  3. Heat tawa add mustard seeds, when it splutters add Bengal gram dal, urad dal.
  4. Add onions and fry it till it becomes soft and then add tomatoes.
  5. Add the cut pumpkin and fry, then add salt, sugar, red chilli powder and fry it well.
  6. Sprinkle some water and allow the pumpkin to cook until it becomes soft.
  7. Add grated coconut at the end and garnish with cilantro.
