Ingredients:

• 1 cup – all purpose flour (Maida).
• 2 tbsp – sugar.
• 1/2 tsp – salt.
• 1/2 tsp – baking powder.
• 1/2 cup (firm but not too hard) – butter.

• 2 cup, halved and stoned – plums.
• 4 tbsp – sugar.
• 1/2 tsp – Cinnamon powder.

• 2 Egg yolks.
• 1/2 tsp – vanilla essence.
• 1 cup – thick cream1 tbsp – sugar.
Method:
- Preheat the oven to 200 C. Line the base and sides of a 8 and a half square cake pan with aluminium foil.
- Mix together the flour, sugar, salt and baking powder. Cut the butter into small pieces and rub into the flour mixture till it is evenly distributed.
- Sprinkle this mixture in the pan and press firmly to cover the base and half way up the sides of the pan.
- Arrange the plum halves over the crumb mixture. Combine sugar and cinnamon (in layer
- ) and sprinkle over the plums. Bake for 15 mins.
- Beat the egg yolks with essence and sugar till smooth and light. Add the cream and pour over the plums.
- Bake till the custard is set and the edges are light brown (25-30 mins).
- Serve warm.
