Ingredients:

• 1.5 – kg ripe plums, wiped and stoned
• 2 – Lemons
• 6 cups (900gs) – Sugar
• 8 to 10 drops – red colour (optional)

Method:

  1. Extract juice of lemons.
  2. Tie rind and pit in a muslin bag.
  3. Chop plums coarsely.
  4. Put in a large cooking pan.
  5. Add in juice and rind bag.
  6. Heat till juice runs.
  7. Simmer till fruit is tender.
  8. Remove rind bag. Discard.
  9. Add sugar. Stir to dissolve.
  10. Add colour. Mix to blend.
  11. Boil on high till setting point is reached.
  12. Check with plate or spoon test.
  13. Pour while hot into sterile jars.
  14. Cool and seal shut.
