
Ingredients:
• 2 – Seelachs/ Pollock fish (substitute with Salmon or any fish of your choice)
• 2 – Potato, large size
• 1 – Onion, large size
• Salt as per taste
• Pepper
• Knorr curry sauce (optional) or (substitute this with 1 tsp – Turmeric, 1 tbsp – Olive oil, Chilli powder (optional) )
• herbs of your choice
Method:
- If you are using frozen fish thaw the fish by putting it in a zip pouch and placing in hot water.
- Quarter the potatoes, slice the onions thickly.
- Layer the baking tray with aluminium foil.
- Place the potatoes and onions over the sheet, sprinkle salt and pepper. Drizzle olive oil on top.
- In a mixing bowl take 1 tbsp Knorr curry sauce, and crushed pepper and mix it with the herbs. (IF you are using the substitute, just mix all the ingredients together)
- With a kitchen towel, pat dry the fish, mix it with the prepared curry sauce paste or spice paste.
- Place the fish over the baking tray, season with salt and lime juice.
- Drizzle some olive oil.
- Turn on the broilers for 2 minutes before placing the fish inside the oven.
- Keep the fish on the bottom layer of the oven.
- Now let it broil for 10 to 15 minutes.
- Once the fish is cooked take it out from the oven and let it rest for 2 minutes.
- Serve with lemon juice and vegetables and some tomato sauce or Tabasco.
