Ingredients:
• 500 g – Pork (1/2 kg)
• 1.5 tsp – mejenga seeds, powdered
• 6 to 8 Cloves – Garlic
• 1 – tomato, fire grilled
• 3 to 4 – dry red chillies, fire grilled
• To taste – salt
Method:
- Make a fine paste of garlic cloves, tomato and dry red chillies. Keep aside.
- Heat a wok. Add pork and roast, until it gets a little cooked.
- Add the ground paste, mix well, cover and cook on low flame, for 15 minutes.
- Add mejenga seeds powder, enough water (so that the meat doesn’t get fully covered in water) and salt. Mix well and cover again.
- Keep checking for every 5-10 minutes. The meat should separate from the bones, when it gets cooked.
- Add half a cup of water again. When the water starts to boil, turn off the heat. Let it cool for some time.
- Add fresh coriander leaves and serve with warm rice.
