Ingredients:

• 1 kg – potatoes.
• 2 – Coconuts, extract about 4 cups of Coconut milk.
• 6 – eggs.
• 1 kg – sugar.
• 150 g – Maida flour(refined).
• 6 tsp – rose water.
• 3 – Nutmeg (jaiphal), powdered.

Method:

  1. Boil and mash the potatoes, without the skin.
  2. Extract about 4 cups of coconut milk and mix with the mashed potatoes.
  3. Beat the eggs and sugar well.
  4. Add the flour to the mashed potatoes.
  5. Add the beaten egg and sugar.
  6. Mix well and add a little coconut milk, if the batter is thick.
  7. Add rose water, a pinch of salt and powdered nutmeg.
  8. Heat 4 tbsps of ghee in a vessel and pour the batter into it. Keep it for five minutes, mixing well.
  9. Grease a tin, and pour in the batter. Bake in a moderate oven at 150 degree F for 30-45 mins.
