Ingredients:
• 1 medium head Cauliflower
• 4 medium Potatoes
• 2 medium Tomatoes
• 4 tbsp
• chopped Coriander leaves
• 2 large Onions
• 1 piece Ginger
• 4 Green chillies (adjust to your taste)
• 1/4 tsp. Turmeric
• 1/2 tsp. Red Chilli powder (adjust to your taste)
• 3/4 tsp. coriander powder
• 3/4 tsp. Jeera powder
• 1/2 tsp. Garam Masala powder (adjust to your taste)
• Salt
• 2 tbsp. oil
• 1/4 tsp. mustard
• 1/4 tsp. Jeera
• 1/4 tsp. Methi
• 2 tsp. Lemon juice (optional)
Method:
- Cut cauliflower into fairly big florets. Chop onions into fine slices. Mince ginger. Chop tomatoes.
- Cube potatoes into 1 inch cubes and cook on high for 12 minutes in the microwave, drain and set aside.
- In the meantime, heat oil, add mustard, jeera and methi and fry till they splutter.
- Add chillies and ginger, then the onions and fry till onions are pinkish.
- Wash the cauliflower in hot water, drain and add to the onions and saute for 3 minutes.
- Add 1/4 cup water, cover and cook on high for 4 minutes.
- Remove cover, add tomatoes and fry till tomatoes are softened.
- Add salt and all the masala powders and stir to mix.
- Then add the potatoes and stir gently (try not to mash the potatoes too much).
- Heat on low for 2 minutes.
- Add lemon juice and coriander, stir to mix and serve with chapattis or naan.
