
Ingredients:
• 1.5 cups – Basmati rice.
• 3 – Potatoes (big).
• 1- Onion.
• 2 -tomatoes (small).
• 6 Cloves – Garlic.
• a small piece – Ginger.
• 3 – green Chillies.
• 1 tbsp – Jeera.
• 1 pinch -Turmeric powder.
• 1/2 tbsp – Chilli powder.
• 1/2 tbsp – Masala powder.
• 10 – Cashew nuts.
• a small bunch – Curry leaves & cilantro.
• Salt.
• 3 tbsp – ghee.
Method:
- In a pan, add a little ghee and fry the rice till it becomes slightly brown and keep it aside.
- Again in a pan, add 1 tbsp of oil, fry the jeera and keep aside.
- Cut the potatoes in the shape of French fries.
- Chop the onions and tomatoes.
- In a frying pan, add 1 tbsp of ghee, add the onion, when it turns slightly golden brown add tomatoes and let it cook for a while.
- Make a paste of garlic, ginger, chillies and add that to the vegetables.
- Finally add the potatoes and let it cook for another 6-10 mins.
- Add, turmeric, chilli powder and salt.
- In a rice cooker, pour 2 tbsps ghee and the cooked vegetables and the rice with 1.5 cups of water.
- Add masala powder (1/2 tsp) and fried jeera.
- When the rice is done, add fried cashew nuts and chopped curry and cilantro leaves.
- Serve it with green pepper raitha.
