Ingredients:

• Potatoes – 2 large.
• Onion – 2 medium.
• Ginger chopped – 1 tsp.
• Garlic chopped – 1 tsp.
• Green chilli chopped – 3.
• Chilli powder – 1 tsp.
• Coriander powder – 2 tsp.
• Turmeric powder – 1/2 tsp.
• Garam Masala powder – 1/2 tsp.
• Coconut extract – 2 cups.
• oil – 1/4 cup.
• Cinnamon sticks – 2 no.
• Mustard – 1/2 tsp.
• Curry leaves – 1 sprig.
• Salt to taste.

Method:

  1. Cook potatoes separately.
  2. Heat oil in a kadai, splutter mustard seeds, add curry leaves.
  3. Add chopped onion, green chilli, ginger, garlic, cinnamon sticks and fry till golden brown.
  4. Add all powders and put the boiled potatoes in it.
  5. Add 2 cups of water and salt to taste.
  6. After the gravy becomes thick, add coconut extract and simmer it for 3 mins.
  7. Add garam masala powder, stir and serve.
