Ingredients:

• 1 – potato, diced.
• 1 – stalk Mint leaves.
• 1/2 – green chilli.
• 1/2 – lemon, rind grated.
• 1 tbsp – Cabbage finely chopped.
• 2 to 3 – Broccoli florets, finely chopped.
• 1 tbsp – carrot, finely chopped.
• 1 tbsp – plain flour.
• 1 tsp – butter.
• pepper to taste.
• Salt to taste.

Method:

  1. Boil chopped potato in plenty of water.
  2. When soft, drain it and save water.
  3. Run potatoes, chilli, mint and flour in mixie.
  4. Add 1/2 cup stock to make a smooth paste.
  5. Heat butter and stir fry chopped veggies.
  6. Add rind and 3 cups stock. Bring to a boil.
  7. Add potato paste, stirring continuously.
  8. Add salt and pepper as per taste.
  9. Bring to a boil, simmer for 3-4 mins.
  10. Serve hot, topped with fresh cream, if desired.
