
Ingredients:
• 1 – potato, diced.
• 1 – stalk Mint leaves.
• 1/2 – green chilli.
• 1/2 – lemon, rind grated.
• 1 tbsp – Cabbage finely chopped.
• 2 to 3 – Broccoli florets, finely chopped.
• 1 tbsp – carrot, finely chopped.
• 1 tbsp – plain flour.
• 1 tsp – butter.
• pepper to taste.
• Salt to taste.
Method:
- Boil chopped potato in plenty of water.
- When soft, drain it and save water.
- Run potatoes, chilli, mint and flour in mixie.
- Add 1/2 cup stock to make a smooth paste.
- Heat butter and stir fry chopped veggies.
- Add rind and 3 cups stock. Bring to a boil.
- Add potato paste, stirring continuously.
- Add salt and pepper as per taste.
- Bring to a boil, simmer for 3-4 mins.
- Serve hot, topped with fresh cream, if desired.
