Ingredients:

• 500 g – Potato
• 2 tbsp – Butter
• 1 – glass Milk
• 1 – Egg yolk
• 1 – Onion
• 1 – glass water
• 1 tbsp – Cream
• salt and pepper to taste

Method:

  1. Slice the onion and potato very thinly. Cook in butter for 5 minutes, stirring all the time.
  2. Do not allow the potatoes to brown.
  3. Add the milk and the water. Cover and simmer for 30 minutes.
  4. Pass the soup through a fine wire.
  5. Sieve. Beat egg yolk and add it to the soup.
  6. Stir in the cream gradually. Serve.
