Ingredients:

• 2 cups – yellow or red pumpkin, peeled and cubed
• 1.5 litre – water or vegetable stock
• 200 ml – Coconut Milk
• 1 cup – onion, chopped
• 1/2 cup – short macaroni
• 1 tbsp – vegetable or Peanut oil
• 2 tsp – garlic, minced
• 1 tsp – cumin powder
• 1/2 tsp – chilli powder
• Coriander leaves to garnish
• salt to taste

Method:

  1. Cook macaroni in salted boiling water. Drain and reserve.
  2. Heat the oil and fry onion and garlic till fragrant.
  3. Add cumin and chilli powder. Fry for few seconds.
  4. Add the pumpkin and water or stock.
  5. Simmer till the pumpkin is cooked.
