Ingredients:
• 2 cups – yellow or red pumpkin, peeled and cubed
• 1.5 litre – water or vegetable stock
• 200 ml – Coconut Milk
• 1 cup – onion, chopped
• 1/2 cup – short macaroni
• 1 tbsp – vegetable or Peanut oil
• 2 tsp – garlic, minced
• 1 tsp – cumin powder
• 1/2 tsp – chilli powder
• Coriander leaves to garnish
• salt to taste
Method:
- Cook macaroni in salted boiling water. Drain and reserve.
- Heat the oil and fry onion and garlic till fragrant.
- Add cumin and chilli powder. Fry for few seconds.
- Add the pumpkin and water or stock.
- Simmer till the pumpkin is cooked.
