Ingredients:
• 2 cup – par-boiled Rice
• 2 tsp – Urad Dal powder
• 1/4 tsp – Asafoetida
• 1/2 tsp – Cumin seeds
• 2 tbsp – Butter
• Oil for frying
Method:
- Rinse the rice and soak in water for at least 3 hours
- Drain and grind in a mixer without adding water.
- Later add salt dissolved in 2 tsp water and grind into a smooth dough.
- Heat the pan, add 2-3 tsp of urad dal and dry fry till it becomes light brown colour
- Grind the fried urad dal in a mixer to a powder.
- Sieve the dal powder using a strainer to get a fine dal powder.
- Add to the rice dough, 2 tsp of urad dal powder along with asafoetida and cumin seeds
- Now mix thoroughly the dough and add butter and mix well
- Take a clean plastic cover and grease it with oil and place a water bottle lid. Now grease hands with oil and take small quantity of dough and gently rub the palms to make like a thick thread
- Slowly and carefully twist the dough around the bottle lid
- Repeat it for 3-4 rounds around the lid and gently remove the lid from the middle
- Heat oil in the pan, gently take the chaklis in hand or using a spatula and drop it at the side of the pan so that the oil will not spill.
- Remove from oil when crisp and drain on kitchen towel.
