Ingredients:
• 1 – Cauliflower cut into small florets
• 4 – Potatoes cut in cubes
• 2 – Onions chopped
• 2 – Tomatoes chopped
• 6 – Green chillies sliced
• 2 inch – Ginger chopped
• 2 tbsp – Red Chilli powder
• 1 tbsp – Turmeric powder
• 1 tbsp – Cumin seed powder
• 1 tbsp – mustard powder
• 1tbsp – Garam Masala
• 1 – Bay Leaf
• A few Cloves
• Oil
• Salt as per taste
• Chopped coriander for garnishing
Method:
- Heat the oil in a pan.
- Stir fry the cauliflower florets and cubed potatoes in oil.
- Remove once they are half cooked.
- Keep them aside.
- In another pan, heat oil and add bay leaf, cloves and sliced onions.
- Sautee for 10 minutes.
- Add chopped ginger followed by chillies and tomatoes.
- Mix everything well and let it cook for 5 minutes.
- In a small bowl mix turmeric powder, chilli powder, garam masala, cumin seed powder and mustard powder with water.
- Add this mixture to the pan.
- Mix everything well.
- Finally, add cauliflower florets and cubed potatoes to the masala.
- Add some water and let it cook for 10 minutes.
- Garnish with coriander leaves and serve hot with phulkas.
