Ingredients:

• 1 – Cauliflower cut into small florets
• 4 – Potatoes cut in cubes
• 2 – Onions chopped
• 2 – Tomatoes chopped
• 6 – Green chillies sliced
• 2 inch – Ginger chopped
• 2 tbsp – Red Chilli powder
• 1 tbsp – Turmeric powder
• 1 tbsp – Cumin seed powder
• 1 tbsp – mustard powder
• 1tbsp – Garam Masala
• 1 – Bay Leaf
• A few Cloves
• Oil
• Salt as per taste
• Chopped coriander for garnishing

Method:

  1. Heat the oil in a pan.
  2. Stir fry the cauliflower florets and cubed potatoes in oil.
  3. Remove once they are half cooked.
  4. Keep them aside.
  5. In another pan, heat oil and add bay leaf, cloves and sliced onions.
  6. Sautee for 10 minutes.
  7. Add chopped ginger followed by chillies and tomatoes.
  8. Mix everything well and let it cook for 5 minutes.
  9. In a small bowl mix turmeric powder, chilli powder, garam masala, cumin seed powder and mustard powder with water.
  10. Add this mixture to the pan.
  11. Mix everything well.
  12. Finally, add cauliflower florets and cubed potatoes to the masala.
  13. Add some water and let it cook for 10 minutes.
  14. Garnish with coriander leaves and serve hot with phulkas.
