
Ingredients:
• 3 -potatoes boiled, peeled and cubed
• 1.5 cup- Methi leaves
• 1 -Tomato or 1/2 cup – Tomato puree
• 1 tsp – Garlic peeled and chopped finely
• 1 tsp – Ginger peeled and chopped
• 1 tsp – Cumin seeds
• 1 tsp – mustard
• 2-3 – Green chillies
• 1 tsp -red chilli powder
• 1.5 tsp – coriander powder
• 1 tsp – Garam Masala
• 1 tbsp – Jaggery or Brown sugar
• 1 tbsp – sour Cream
• 1 tbsp – cooking oil
Method:
- Heat oil in a pan and add mustard and cumin seeds, let it sputter.
- Add green chillies, ginger and garlic and saute until the garlic turns light brown.
- Add the potatoes and let it cook well (5 minutes approximately).
- Add the tomato puree with the potatoes and cook for another 2 minutes.
- Then add some water and the methi leaves.
- Stir in all the masalas along with the jaggery.
- Let the methi cook for a few minutes.
- Finally, add sour cream just a couple of minutes before removing from the heat.
