Ingredients:

• 3 -potatoes boiled, peeled and cubed
• 1.5 cup- Methi leaves
• 1 -Tomato or 1/2 cup – Tomato puree
• 1 tsp – Garlic peeled and chopped finely
• 1 tsp – Ginger peeled and chopped
• 1 tsp – Cumin seeds
• 1 tsp – mustard
• 2-3 – Green chillies
• 1 tsp -red chilli powder
• 1.5 tsp – coriander powder
• 1 tsp – Garam Masala
• 1 tbsp – Jaggery or Brown sugar
• 1 tbsp – sour Cream
• 1 tbsp – cooking oil

Method:

  1. Heat oil in a pan and add mustard and cumin seeds, let it sputter.
  2. Add green chillies, ginger and garlic and saute until the garlic turns light brown.
  3. Add the potatoes and let it cook well (5 minutes approximately).
  4. Add the tomato puree with the potatoes and cook for another 2 minutes.
  5. Then add some water and the methi leaves.
  6. Stir in all the masalas along with the jaggery.
  7. Let the methi cook for a few minutes.
  8. Finally, add sour cream just a couple of minutes before removing from the heat.
