Ingredients:

• Medium over-ripe bananas, mashed – 3
• All-purpose flour – 1.75 cups
• Baking powder – 1.5 tsp
• Baking soda – 1 tsp
• Caster Sugar – 1.5 cups
• Unsweetened cocoa powder – 3/4 cup
• Eggs, beaten – 2
• Milk – 1/2 cup
• Water – 1 cup
• Vegetable oil – 1/2 cup
• Vanilla essence – 1 tsp
• Salt – 1/4 tsp
• For topping (optional):
• Pure icing Sugar – 1.5 cups
• Medium over ripe banana, mashed – 1/4 cup
• Soft Butter – 1 tbsp
• Vanilla essence – 1/2 tsp

Method:

  1. Preheat oven to 350F/180C.
  2. In a mixing bowl, whisk flour, sugar, cocoa, baking powder, baking soda and salt.
  3. In a separate bowl, whisk bananas, eggs, oil, milk, water and vanilla.
  4. Add wet to dry and stir until just combined.
  5. Pour batter into a greased and floured cake pan.
  6. Bake for 35-40 mins or until a wooden pick comes out clean.
  7. Allow to cool before removing from pan.
  8. Finish cooled cake with chocolate glaze topping, if desired.
  9. Topping:
  10. Combine all ingredients in a bowl and stir until icing is spreadable.
  11. Add more sugar if necessary to thicken.
  12. Spread icing over cold cake immediately.
  13. Garnish with banana slices and chocolate shavings.
