Ingredients:
• 1 kg – Bitter gourd
• Salt to taste
• 4 tbsp – oil
• 2 tsp – cumin powder.
• 4 tsp – chilli powder
• 1 tsp – Turmeric powder
Method:
- Wash the bitter gourds, cut and scrape out the seeds inside.
- Slice into thin slices.
- Soak the slices in salt water and a pinch of turmeric for about 2 hours. This would remove a lot of its bitterness off.
- Drain and squeeze out the excess water.
- Mix with the chilli powder, cumin powder, turmeric powder, and salt.
- Heat oil in a pan and deep fry the bitter gourd slices till golden brown and crisp. Serve with ketchup.
- This tastes best with curd rice.
