Ingredients:

• For the dhokla batter:
• 1 cup -sooji (semolina)
• 1.5 cup – Curd
• A small piece of Ginger grated
• 2 – Green chillies cut fine
• Less than 1/4 tsp – soda bicarbonate
• 2 tbsp – oil
• 2 tbsp – Lemon juice
• 1 tsp – Turmeric
• Salt to taste
• For green chutney:-
• 1 bunch – coriander
• 3 – Green chillies
• 5 – flakes Garlic
• Tamarind water/Lime juice
• Few roasted Peanuts (remove skin)
• Salt to taste
• Pinch of Sugar
• For tadka:-
• 2 tsp – Mustard Seeds (rai)
• Few Curry leaves
• 2 – Green chillies (slit)
• For garnishing:-
• Chopped Coriander leaves

Method:

  1. Boil water in a large pan.
  2. Grease a steel thali and keep aside.
  3. Now take all the ingredients of the dhokla batter and mix it nicely in a dish. Do not add the soda.
  4. Mix all the ingredients nicely till the mixture is smooth.
  5. Then mix the soda.
  6. Wait for 5 minutes.
  7. The batter will rise.
  8. Now put this mixture into the greased thali and steam for 10 minutes on high flame and for another 5 minutes on low flame.
  9. Now remove it and cool.
  10. Cut the dhoklas into squares.
  11. Then heat a little oil and add mustard seeds till they crackle.
  12. Add the green chillies, the curry leaves.
  13. Stir for a minute.
  14. Add the tempering on top of the dhokla.
  15. Garnish with coriander.
  16. Serve with green chutney.
  17. For the green chutney, just grind all the above mentioned ingredients for the chutney in a blender and serve.
