Ingredients:

• 1 – Mango
• 1/2 cup – fresh cream, chilled
• 1/4 cup – powdered Sugar
• 1 drop – Vanilla essence
• 1/2 packet – China grass
• 1.5 cups – water
• 1/2 – ripe Mango for garnishing

Method:

  1. Peel and chop the mangoes, then mash them into a coarse pulp.
  2. Break China grass into small pieces. Heat water in a pan, add the China grass to it and stir continuously till fully dissolved.
  3. Strain and allow to cool to room temperature.
  4. Add mango pulp, sugar, and vanilla essence. Chill till partially set.
  5. Beat cream till smooth. Add to partially set mixture. Beat till well blended.
  6. Set again till firm. Do not allow to freeze till hard.
  7. The mixture should be scoopable and grainy.
  8. Serve chilled, garnished with slices or pieces of ripe mangoes.
